What is the difference between MOIMA’s Falafel Mix and fresh Falafel?
The difference is minimal and neglectable. Although it is true that in the “fresh Falafel” or classic way fresh parsley, garlic and onions are used, the main ingredient with more than 90% in weight are the chickpeas. These chickpeas are dried and not fresh. Therefore, overnight soaking in water is required, or at least for 6-8 hours, before grinding it with the above mentioned ingredients.To prepare truly fresh Falafel, it would require to take the chickpeas directly from the plant (shrub) and not let them dry in the first place. In addition, 2% – 4% are spices, which are not fresh either. In total, 6% – 8% of the ingredients – onions, garlic, parsley – are truly fresh, and 92% – 94% (chickpeas and spices) are dried. To call the classic way of preparing Falafel “fresh” is misleading.
Falafel are mostly eaten as sandwiches to-go or as a side dish. Falafel sandwiches in Arabia are typically wrapped in a pita bread with hummus, tomato, cucumber, tahini sauce with or without chili sauce. Alternatively, when served as a side dish, it comes with hummus, foul (bean puree), (goat/sheep) cheese, zeit & zaatar a very popular and healthy food item consisting of olive oil & thyme, oregano, sesame seed mix), olives, grapes, watermelon, halwa and black tea with sugar.
